Caramelised Bird's Nest Panna Cotta
Panna Cotta is a traditional Italian creamy custard dessert. Chef Soldati modernized the classic recipe by infusing the Panna Cotta with collagen and seasonal fresh fruits like redcurrants, Japanese Shine Muscat grapes and blueberries, to balance the sweet and caramelized flavour of the Panna Cotta.
The dessert is highlighted with a spoonful of quality and nutritious bird’s nest on top that adds texture and pairs perfectly with the sweet palate.
